It’s summertime and the temperatures are rising. Time to make popsicles! Better yet, do it with the kids. After all, we need a new generation of outstanding chefs. All you need are popsicle molds, a blender, and lots of fruit. You can create flavor combinations like mango-lime, banana-yogurt-peanut butter, or kiwi-basil. Just a little imagination is needed, and kids certainly have lots of that!

Here is a recipe for strawberry-watermelon popsicles, a sure hit on those thirsty days.

Ingredients for 12 popsicles:

1lb watermelon
1lb strawberries
zest and juice of 1 lime

Chop up the watermelon and remove the seeds, then wash the strawberries and cut off the stems. Toss the fruit into a blender, and add the zest and juice of the lime. Blend till smooth and pour into popsicle molds. Freeze for a few hours.

You can prepare other fruit mixtures in the same way, and even go crazy and dip the tops in melted chocolate. The kids will surely be pleased.
